Ingredients
- 2 c flour
- 1/3 c granulated sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 tsp. cardamom
- 1/4 tsp. nutmeg
- 8 tbsp. cold non-dairy margarine (cut into small pieces)
- 1 tsp. blood orange zest
- 1/2 c Non-dairy milk, add more if too dry
- 2 tbsp. blood orange juice
- 1 tbsp. melted non-dairy margarine
- Raw cane sugar for topping
Instructions
- Preheat oven to 400 degrees. Place parchment paper on a baking sheet. In a medium bowl, combine the flour, sugar, baking powder, and salt. With a pastry cutter or two knives, cut the non-dairy margarine into the flour mixture until it becomes the size of very coarse crumbs.
- Stir in the blood orange zest and make a well in the center. Pour in ½ c of the non-dairy milk and mix well. Add additional non-dairy milk if it is too dry.
- On a lightly floured surface, gently knead the dough, just until it comes together, and pat it into an 8-inch circle and about 1 inch in thickness. Cut the dough into 8 wedges and place them on the baking sheet. Melt the remaining 1 T non-dairy and brush it on top of the scones. Sprinkle with the raw cane sugar.
- Place in the oven and bake for 20 minutes. Can be served warm or at room temperature.
