Vegan Zucchini Chocolate Chip Bread

This Vegan Zucchini Chocolate Chip Bread makes 2 sweet and moist loaves of bread. That makes one for yourself and one to give to your parents, a friend or even a neighbor. You can half the recipe if you want but who really wants to do that?! The flax egg holds the bread together very nicely and it adds some moisture to the bread. If you are not allergic to eggs, you can add them instead of the flax egg.

Ingredients

  • 6 tbsp. ground flax seeds
  • 1/2 c warm water
  • 1 c light brown sugar
  • 1 c granulated sugar
  • 1 c canola oil
  • 1/2 c applesauce
  • 1 tsp. vanilla
  • 2 1/2 c grated zucchini
  • 3 c all-purpose flour
  • 1 c whole wheat flour
  • 1 tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tbsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. salt
  • 1 c vegan chocolate chips or raisins (optional)

Instructions

  1. Preheat oven to 350 degrees and grease two 9x5 loaf pans. Mix together flax seeds and warm water and let it sit for 10 minutes. Grease two 9x4 in loaf pans.
  2. In a large bowl, add both sugars, oil, applesauce and vanilla and mix. Grate the zucchini and add to the other wet ingredients and combine. Add in flaxseed egg and mix again.
  3. In a separate bowl, mix together the flours, baking powder, baking soda, cinnamon, nutmeg and salt. Add dry ingredients to the wet ingredients and mix well. The batter will be thick. Add the chocolate chips or raisins if you would like. Pour the batter into the two loaves.
  4. Place in the oven and bake for 50-55 minutes or until you can insert a toothpick into the center and it comes out clean. Let cool before slicing.
