Vegan Peppermint Snowball Cookies

It’s December 11th and I haven’t made ANY Christmas cookies. I NEEDED some cookies and I NEEDED it quickly. I also was low on ingredients. No molasses to make my annual Molasses cookie and no sprinkles for my Spritz cookies. Then, I remembered this great recipe for Snowball Cookies that I got from a friend a long time ago. It only has 5 ingredients, and it is SUPER easy! I had just bought a new box of candy canes which was just what I wanted to add to put me in that Christmas spirit. And that’s how my Vegan Peppermint Snowball Cookies were born!

 

These are the perfect go-to holiday cookie if you need something to make super quickly and easily. But don’t let the easiness fool you, even though this recipe is super simple, it is still extremely delicious. They practically melt in your mouth each time you take a bite! And the peppermint flavor tastes like a sweet candy cane on Christmas morning.

Because this recipe is so simple, the only substitute I really should tell you about is the margarine. I use Earth Balance vegan butter! As for the candy canes, the main ingredient in most candy canes is sugar, so most of them will be allergy-friendly; however, I’d still recommend you read the ingredients just in case!

Vegan Peppermint Snowball Cookies

These Vegan Peppermint Snowball Cookies are made of only 5 ingredients and are SUPER easy to make! All you need is vegan margarine, confectioner’s sugar, flour, vanilla, and peppermint candy. Roll the dough in round balls and cover with confectioner’s sugar and you have a festive looking and cookie with a Christmas taste. These cookies...

Ingredients

  • 1 c vegan margarine
  • 1/2 c confectioner’s sugar
  • 1 tsp. vanilla
  • 2 c all-purpose flour
  • 1/4 c crushed peppermint candies
  • 1/2 c confectioner’s sugar for rolling

Instructions

  1. Preheat the oven to 350 degrees and line a cookie sheet with parchment paper. Set aside.
  2. In a mixer, cream the butter and the sugar, and then add the vanilla until mixed until creamy. Crush the peppermint into small pieces and gently fold into the butter and sugar mixture.
  3. Slowly beat in the flour until it forms into a ball. Scoop out the dough using a cookie scoop and roll the dough into round balls. Place on cookie sheets and bake for 10-12 minutes or until the bottoms are just starting to turn brown.
  4. Let cool for 4-5 minutes. Place the remaining ½ C confectioner’s sugar in a bowl and roll cookies in the sugar mixture. Let them cool on a wire rack. Once completely cooled, roll in the sugar mixture again.
