There’s a brand of dairy-free caramels out there that can take away the hassle if trying to make your own dairy-free caramel! Amazing! Cocomels Coconut Milk Caramels are dairy-free, soy-free, vegan and perfect for this recipe! I swear this isn’t an advertisement for Cocomels Coconut Milk Caramels, I just simply adore them.
Now that we got my obsession for those caramels out of the way, we can talk about this recipe for Vegan Salted Caramel Chocolate Chip Cookies! This is basically your typical vegan chocolate chip cookies recipe, but with an extra caramel surprise on the inside! I’m sure you could use your own chocolate chip cookie recipe, but I swear that mine is the best! Just try it. I bet you won’t be disappointed. Plus I switched regular salt for sea salt to give it that extra special flavor.
This recipe uses vegan butter, I recommend Earth Balance! Earth balance has both vegan and soy-free butters! I really like using 1/4th cup of apple sauce as an egg replacement because it makes the cookies extra chewy, but you could use any other egg replacement you prefer. I really like Bob’s Red Mill egg replacer or Enger-g Egg replacer. As for the chocolate chips, I know every food-allergy family stands by their own brand of chocolate chips, but I adore the Enjoy Life Vegan Chocolate chips! They’re incredible and dairy, egg, nut, and soy-free!
The secret to this recipe is the sea salt sprinkled on top after they’re cooked! *chef kiss* Amazing! Trust me, my family ate these Vegan Salted Caramel Chocolate Chip Cookies in only a few days! They practically begged me to make them some more! And if caramel isn’t your thing, that’s okay, I don’t judge! Just make these Vegan Chocolate Chip Cookies instead!
