Vegan Strawberry Oatmeal Jam Bars

These Vegan Strawberry Oatmeal Jam Bars are tangy, sweet and have an amazing strawberry and oat flavor. They are perfect for breakfast, a snack or, best of all, you could warm them up for dessert and top with your favorite vanilla ice cream.

They have a winning combination of flavors with strawberry, oats, and a hint of cinnamon. On top of that, they can be made with less than 10 ingredients!

 

 

This recipe is vegan and allergy-friendly with no eggs or butter and can be gluten-free by using gluten-free oats and your favorite GF flour.

The buttery oat crust is used for the crust and the topping of these Vegan Strawberry Oatmeal Jam Bars while the strawberry preserve filling adds the amazing taste to these bars.

 

We love preserves in our house. I mean who doesn’t?

Our favorite brand of jam is Bonne Maman Strawberry Preserves because it tastes like homemade preserves. These oat bars would also be yummy with their Four Fruits Preserves, Blackberry Preserves, and Cherry Preserves.

INGREDIENTS:

 

Oats – We use Bob’s Red Mill Gluten-free Oats because their allergen manufacturing is the best in the business and their quality is top notch. However, you can substitute your favorite oats here.

Flour – We used all-purpose flour, but this recipe is easy to make gluten-free by swapping the regular flour with your 1:1 gluten-free flour of choice.

Brown Sugar – Brown sugar works better than regular sugar with a more robust flavor and adds more moisture which helps the flour mixture clump together.

Baking Powder – Baking powder works better than baking soda in this bar recipes as a leavening agent.

Cinnamon – Cinnamon is perfect to pair with the slightly sweet flavor of the preserves.

Salt – Just a pinch of salt is all you need so it doesn’t overpower the strawberry flavor.

Vegan Margarine – Melted vegan margarine will help the oats and flour mixture stay together without using eggs. We’ve always been a fan of Earth Balance and use this vegan margarine in all my recipes. Any vegan margarine works here so go ahead and substitute your favorite here.

Strawberry Preserves – Our favorite brand is Bonne Maman and we love that it has big chunks of real strawberries and bold strong flavors that you don’t get with other brands. You can use strawberry jelly in a pinch, but you will not get the same robust flavor from jelly as you do with jam.

 

HOW TO MAKE OATMEAL BARS

Prepare the Pan – Grease an 8×8 dish and cut two strips of parchment paper, placing them on opposite ends, and crossing them over in the middle of the pan. This will make it easier to pull out when finished.

Crust & Topping Mixture – Combine the oats, flour, brown sugar, baking powder, salt and cinnamon then stir in the melted vegan margarine and mix until mixture forms clumps. Like oatmeal cookies.

Press Mixture into Pan – Add half of the flour mixture into the pan and press it into an even layer. The other half of the mixture will be used for the topping.

Add Preserves and Topping – Spread the jam evenly over the base mixture making sure to spread it all the way to the corners. Crumble the reserved oatmeal mixture over the jam. Bake until topping is slightly brown and the jam is hot.

 

 

 

Remove and Let Cool – Bars need to be fully cooled before cutting into squares. This may take up to an hour.

Storage – Cut bars should be stored in a refrigerator for up to 4 days but can be frozen for 2-3 months. They can be wrapped individually or together in foil. Reheating them in the oven will bring back the crispness to the oats.

Ingredients

  • 1½ C gluten-free oats
  • 1 C all-purpose flour
  • ⅓ C brown sugar
  • ¼ tsp baking powder
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • ½ C vegan margarine, melted
  • 1 C strawberry preserves

Instructions

  • Preheat oven to 375°. Grease a 8x8 dish and cut two strips of parchment paper, placing them on opposite ends with an overlap. This will make it easier to pull out when finished.
  • Melt the vegan margarine, set aside.
  • In a large bowl, combine the oats, flour, brown sugar, baking powder, salt and cinnamon. Stir until combined.
  • Pour the melted vegan margarine and stir until it forms clumps and are evenly mixed. Set aside half of the oat mix to be used as the toppping.
  • Press the remaining oats mixture evenly into the prepared pan. Press firmly. Spread the strawberry preserves evenly over the oat mixture.
  • Spread the remaining oat mixture over the preserves.
  • Bake 30-35 minutes until the topping is slightly brown and preserves are bubbly. Cool for at least an hour before cutting into squares.

Notes

Notes: Gluten-free: make sure you use gluten-free oats and a GF mix. 
Can be served cool as a bar or warm with ice cream as a dessert.
