My family used to spend our summers relaxing in Michigan, lounging on the beach, and drinking cold iced lemonade. Those summers in Michigan still remain some of my favorite memories. However, even long after we sold that Michigan Lakehouse, we still drive up to Michigan just to get our blueberry fix. Since my daughter now goes to the University of Michigan, it gives me an excuse to drive up to see her often. Sometimes, I even drive out of my way to pick up some blueberry jam from my favorite small business in Grand Haven called Blueberry Haven. The jam was absolutely divine in our Vegan Blueberry Oatmeal Bars.

Now, let’s get to these Vegan Blueberry Oatmeal Bars. I’ve had Blueberry Oatmeal Bars before, but none of them tasted quite like these bars I made a few days ago. I added cinnamon and nutmeg to this recipe and it made the flavors POP. My family was practically waiting outside of the oven for them to be done because they smelled so wonderful.
If you don’t know how to cut butter into the flour mixture, let me explain real quick. You want your butter to be cold or even frozen. Then, you place the butter in the flour mixture and you use two knives to slice the butter in a cross-motion. Keep cutting the butter until it is in tiny little balls coated in flour, resembling a crumb-like texture.
Vegan Blueberry Oatmeal Bars are a great, light dessert. My family absolutely loved them. They are easy to make and a real showstopper if you bring them to a summer barbecue. I’m so excited for you to enjoy this wonderful recipe!
