Easy Vegan Peach Crisp

Summer for us means peaches and blueberries. As soon as they arrive, we start baking. One of our favorites is this very easy Vegan Peach Crisp recipe that we have been making every summer. Super easy because you do not need to cook the fruit before you bake it. And the smell! Nothing better than the smell of peaches and brown sugar cooking in the oven.

Ingredients

  • 5 c peeled and sliced peaches
  • 3 tbsp. sugar
  • 1 tbsp. lemon juice
  • 1/2 c Regular oats
  • 1/2 c packed brown sugar
  • 1/2 c all-purpose flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 c vegan margarine

Instructions

  1. Preheat oven to 375 degrees. Peel and slice peaches and place them in an 8x8 baking dish. Add sugar and lemon juice and stir.
  2. For the topping, combine oats, brown sugar, flour, cinnamon, and nutmeg in a medium bowl. With two knives, a pastry cutter, or your hands, cut butter into the flour mixture and mix until pea-size crumbs form. Spread the topping evenly over the apples.
  3. Bake for 30-35 minutes until crisp is golden brown. Serve warm.
