Cinnamon Sugar Mixture

Instructions
Make the Dough
- Mix together the yeast packets and the warm water in a medium bowl and let sit for 5 minutes. Next, mix your 2 equivalent eggs and set aside for 5 minutes. Melt the butter and let it sit until it reaches room temperature. While you are waiting, combine the non-dairy milk, sugar, and salt in a small bowl and add to the yeast mixture and mix until just blended. Slowly add the egg replacer and the melted butter and mix. Once mixed, slowly add the flour, one cup at a time, until it forms a dough mixture. Knead it on a floured surface for a few minutes. Then, place the dough in a greased bowl. Wet a towel with warm water and cover the bowl.
- Let sit until it rises. Punch it down, knead again and place back in the greased bowl. Place a warm towel over the bowl again. Let it rise one more time and knead again. Set aside while you make your cinnamon-sugar mixture.
Making the Cinnamon Sugar
- Preheat the oven to 350 degrees. Grease a sheet pan.
- Next, melt the non-dairy butter in one bowl. Mix the cinnamon and sugar in a separate bowl. Pull or cut 1/2 inch pieces from the dough. Dip the dough in the butter and then the cinnamon-sugar mixture. Pull, twist, and place on the pan.
- Once your pan/pans are full, place in oven and cook for 18-20 minutes.
