Vegan Chocolate Banana SunButter Bites

To be honest with all of you, I almost didn’t have a recipe for you this week. I’ve been racking my brain for some new creative recipe for you all, but honestly my creative juices were not flowing this week. So I made myself a snack and started brainstorming. Then, I realized…I had just made myself a snack and it was the perfect snack to share with you all! When my daughter came back home from college, she taught me this recipe because it is simple and so minimal effort. A perfect college hack! Of course I fell in love with this Vegan Chocolate Banana SunButter Bites recipe. They are so delicious you could eat it for a snack or a dessert!

The chocolate chips I use for most of my recipes is the Enjoy Life brand Semi Sweet Mini Chips. I adore these chocolate chips with all my heart. We always have at least three bags of chocolate chips in our cabinet to make sure we avoid the “horror” of running out of chips. I also used the Creamy SunButter for the spread. I really never liked Sunflower Butter until I tried SunButter. It has a wonderful nutty flavor and a really great texture. Both of those combined with bananas makes for the perfect sweet snack.

You might have some extra chocolate sauce. If that’s the case, then you have a couple of options. 1) EAT THE CHOCOLATE!! 2) Drench the bananas in that chocolate. 3) Feel free to try it out as a drizzle on any of the others recipes on this blog. Whatever you do, I hope it turns out wonderful!

Vegan Chocolate Banana SunButter Bites

These quick, easy, and delicious bites are a perfect snack for any occasion!  I absolutely adore these Vegan Chocolate Banana SunButter Bites. Get excited to feed your sweet tooth!

Ingredients

  • 1 Large Banana
  • Creamy SunButter
  • 1/4 c Vegan Chocolate (I used Enjoy Life)
  • 1/2 tbsp. Coconut Oil

Instructions

  1. Start by adding the chocolate and coconut oil to a small microwave safe bowl. Microwave in 15 second increments, stirring between each increment, until fully melted. Mine only took 30 seconds. Set aside.
  2. Cut your banana in 1/4 inch quarter sized coins. Next, spread a small dollop of SunButter on each banana slice. Finally, drizzle the chocolate over the banana slices and your done! Enjoy!
  3. (Optional) You can put them in the fridge or freezer for a few minutes to give them a cool twist!
