Vegan Chocolate Chip Cookies

Vegan Chocolate Chip Cookies are my comfort food. There is almost never a time where you can walk into my house and not find a batch of fresh baked chocolate chip cookies on the counter. In fact, even though I made these cookies just four days ago, I’m planning on making them again tomorrow. What can I say? I just adore Vegan Chocolate Chip Cookies. Also, a major perk to this recipe is that the dough has no eggs, which means, YOU CAN EAT THE DOUGH. Yes, you heard me right. No eggs=No salmonella. I mean, I’m not saying you should eat the whole batch raw, but also I wouldn’t judge you if you did. I will admit I have indeed eaten a whole batch raw one time and I do not regret it one bit.

On to talking about the ingredients. We used Earth Balance Vegan Butter for our vegan margarine, and you can also get the soy-free version if you would prefer! Also, the chocolate chips we used are the Enjoy Life Brand Mini Chips. This chips are extraordinary and I’m sure I’ve ranted about them enough in other posts for you to know how much I love them.

For the egg replacer, you have a few options. You could use egg replacer, in which the two brands I like are Bob’s Red Mill or Ener-G. Both work great, but I think I prefer Bob’s Red Mill because of its thick egg-like consistency. Another option is you can use applesauce! I know, this is a weird one, but trust me. Applesauce is great if you don’t have or don’t want to use egg replacer. 1/4 Cup of applesauce = 1 egg. You can’t even taste the applesauce at all after it’s done cooking. It gives the cookies a really moist, gooey texture that is just oh-so-good.

These cookies will honestly be the perfect Vegan Chocolate Chip Cookies you’ll ever have. They are crisp on the outside, warm and gooey on the inside, and filled with so much chocolate you’ll melt. They say the secret to a grandma’s chocolate chip cookie recipe is adding extra chocolate chips, so definitely have a heavy hand when adding those little delicious chips.

If chocolate isn’t your thing, well, firstly, I don’t understand you, but secondly, you should try our Vegan Refrigerator Cookies! They taste similar to chocolate chip cookies, but they have oats instead of chocolate.

Vegan Chocolate Chip Cookies

Ingredients

  • 2/3 c vegan margarine
  • 1/2 c brown sugar
  • 1/2 c granulated sugar
  • 1 tsp. vanilla extract
  • 2 egg replacer eggs or ¼ C unsweetened applesauce
  • 1 3/4 c all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c mini chocolate chip cookies

Instructions

  1. Preheat over to 375 degrees. If using egg replacer, combine the egg replacer and warm water and put aside.
  2. Combine the vegan margarine, brown sugar, granulated sugar, and vanilla in a mixer. Mix until combined. Add egg replacer or unsweetened applesauce and mix until batter is creamy.
  3. In a separate the medium bowl, combine the flour, baking soda, baking powder and salt. Gradually add to the creamy mixture and mix until it is all combined. Add the chocolate chips and stir with a spatula. Using a scooper, place on a baking sheet.
  4. Bake 10-12 minutes or until lightly brown. Cool on a wire rack before serving.
