Now, I know what you’re thinking…summer is almost over, Fall is in the air, autumn recipes are right around the corner…NOT YET! I still have quite a few summer recipes to share with you all to make summer last just a little bit longer. The multiple cantaloups we received the past few weeks from our CSA share helped to spawn this next recipe. I was not expecting to receive the number of cantaloupes that I did, especially considering I biked to pick up my CSA share. Imagine me riding my bike home, wobbling back and forth, with two cantaloupes threatening to spill out of my overflowing backpack. But forgetting the exhausting journey home, at least I was able to use them to make this amazing Vegan Lime Cantaloupe Granita.
I was not prepared to like this Vegan Lime Cantaloupe Granita as much as I did. It might have to become a new weekly recipe. This is the perfect light dessert for the summer. It is beautifully sweet with just a hint of tartness from the lime. If you prefer a tarter granita, then just add more lime, it’s as simple as that!
Remember the secret to this recipe is you need to take the frozen mixture out of the freezer every hour to give it a good stir. This will help make a more slushy/shaved ice consistency which is what you want.
