This morning my daughter came up to me and showed me a TikTok of this creator making a Vegan Mint Iced Coffee. The creator’s TikTok is @k.aralyn and I’ll link the TikTok here. My daughter loves coffee so she set to work making one for herself, attempting to proportionate everything correctly (the video didn’t give measurements). When she was done, she was really excited about how it turned out. I tried it and I honestly really enjoyed it. It was flavorful and sweet, but definitely kept the nice coffee flavor. She gave me the recipe and I decided to write it out for you all to enjoy.
The great thing about this recipe is you can make this recipe with whatever mint flavor strength you want. There is a couple ways to do this. You can steep the mint leaves for longer to add more flavor to the syrup. You can also add more syrup to the coffee to make it a bit more minty. Both ways work great. Personally, I love the taste of mint so I normally steep my mint for a bit longer.
For the creamer/milk, I just used Oat Milk. If you’ve been on my website before, you know that I absolutely adore Oat Milk. If you don’t like oat milk or have an allergy, I’m sure this recipe would work with plenty other vegan milk alternatives. Use whatever milk makes you most comfortable!
When you brew your coffee, simply brew it the way you prefer to brew coffee. The stronger the better! The Vegan Mint Iced Coffee will be so much better with stronger coffee, I promise!
Also, this recipe will leave you with about a cup and an half left over mint syrup. DO NOT THROW THAT AWAY! Save it! I put my extra syrup in a mason jar and placed it in the fridge. Use it in future iced coffee recipes or try it with my Iced Chai Latte recipe.
This is definitely an iced coffee recipe that I will save in my recipe books. It kept my daughter and I energized for the day. Honestly, I am so much more productive with coffee inside of me!!! Ps. Look at this picture of the mint from my garden! I’m so proud of it!
