Vegan Blueberry Oatmeal Bars

My family used to spend our summers relaxing in Michigan, lounging on the beach, and drinking cold iced lemonade. Those summers in Michigan still remain some of my favorite memories. However, even long after we sold that Michigan Lakehouse, we still drive up to Michigan just to get our blueberry fix. Since my daughter now goes to the University of Michigan, it gives me an excuse to drive up to see her often. Sometimes, I even drive out of my way to pick up some blueberry jam from my favorite small business in Grand Haven called Blueberry Haven. The jam was absolutely divine in our Vegan Blueberry Oatmeal Bars.

When I tell you this jam is heavenly, I mean this jam is HEAVENLY. Honestly, I can’t recommend this jam enough. This whole store has such wonderful products. If you’re looking for someone to buy from for small business Saturday, definitely consider Blueberry Haven. Trust me, you won’t be disappointed.

Now, let’s get to these Vegan Blueberry Oatmeal Bars. I’ve had Blueberry Oatmeal Bars before, but none of them tasted quite like these bars I made a few days ago. I added cinnamon and nutmeg to this recipe and it made the flavors POP. My family was practically waiting outside of the oven for them to be done because they smelled so wonderful.

If you don’t know how to cut butter into the flour mixture, let me explain real quick. You want your butter to be cold or even frozen. Then, you place the butter in the flour mixture and you use two knives to slice the butter in a cross-motion. Keep cutting the butter until it is in tiny little balls coated in flour, resembling a crumb-like texture.

Vegan Blueberry Oatmeal Bars are a great, light dessert. My family absolutely loved them. They are easy to make and a real showstopper if you bring them to a summer barbecue. I’m so excited for you to enjoy this wonderful recipe!

Vegan Blueberry Oatmeal Bars

These Vegan Blueberry Oatmeal Bars will absolutely astonish you. They are packed with flavor and they bring back the sweetest of memories. I loved them and so will you!

Ingredients

  • 1 c Oats
  • 1 c Flour (I used All purpose)
  • 1/4 c Granulated Sugar
  • 1/4 c Brown Sugar
  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Nutmeg
  • 1/4 tsp. Salt
  • 1/2 c Vegan Butter (Chilled)
  • 1 c Blueberry Preserves/Jam

Instructions

  1. Preheat oven to 375 degrees F. Line an 8x8 inch pan with parchment paper.
  2. In a large bowl, combine Oats, Flour, Granulated Sugar, Brown sugar, Cinnamon, Nutmeg, and Salt. Mix well.
  3. Add the vegan butter to the dry ingredients. Cut the butter quickly with two knives until the mixture resembles small crumbs and it is no longer powdery. Do not overmix the mixture, you will want some of the butter to be visible.
  4. Set aside about a cup of the mixture (you will use this later for a topping). Take the rest of the mixture and press it firmly into the the parchment-lined pan.
  5. Pour and spread your blueberry jam over the pressed oat layer. Sprinkle the reserved oat mixture over the top of the jam. Bake until the topping looks slightly browned, for about 35-40 minutes. Cool completely before cutting into 12 bars.
