Savory Bread, Rice and Mushroom Stuffing

For those of you who celebrate Thanksgiving, I’m sure you all are getting anxious about the upcoming holiday.  Perhaps the In-laws are coming? Or your son has a new girlfriend? Or your whole extended family decided to pop in for a visit? Whatever the reason, you are going to want to impress this Thanksgiving! And what better way to impress than to make a delicious meal for all of your visitors! So, get excited for this Savory Bread, Rice and Mushroom Stuffing recipe which will have all of your relatives complimenting your “Top Chef” cooking abilities.

This recipe uses vegan margarine. I’m sure you could use any vegan margarine you prefer; however, I recommend Earth Balance, it never fails to give me the perfect buttery taste! For the long grain and wild rice, you can use any brand you prefer! I used Uncle Ben’s Long Grain and Wild Rice Original Recipe; however, the package does say “may contain milk,” so if you’re extremely sensitive to dairy, I would recommend choosing a different brand. Along the same thought, the package of savory herb stuffing that I used also says “may contain milk.” I used Brownberry Herb Seasoned Cubed Stuffing; however, if you are very sensitive to dairy, I would recommend a different brand.

Pimentos are a type of canned pepper that is orange-red in color. I’m explaining this because my daughter recently asked me what pimentos are and she is a college-aged student, so if she doesn’t know what they are, I’m assuming some of you might not either! Simply enough, I used a 4 oz jar of Dromedary Sliced Pimentos!

This recipe is incredible and sure to wow any guests you might have this Thanksgiving. You could even save the recipe and use it for your Christmas or other holiday meals! Savory Bread, Rice and Mushroom Stuffing

Ingredients

  • 1 package of long grain & wild rice (original not fast cooking) (6.2 oz)
  • 1 1/2 c chopped celery
  • 2 c sliced mushrooms
  • 1/4 c vegan margarine
  • 1 c hot water
  • 1 jar (4 oz) sliced pimentos, drained
  • 1/2 c chopped parsley
  • 1 package (8 oz) savory herb stuffing

Instructions

  1. In a medium saucepan, cook the rice according to directions. While it's cooking, in a separate large skillet, over medium heat, melt the vegan margarine.
  2. Add the celery and sliced mushrooms to the skillet and sauté until soft, about 2-3 minutes. Turn off and add the stuffing and hot water and mix well. Drain the pimentos. Mix in the pimento and parsley to the skillet.
  3. Add the cooked rice and mix well. Serve warm.
