Easy Vegan Peach Pastry

Don’t you just love peaches?!

If you love peaches as much as I do, this Easy Vegan Peach Pastry recipe is for you! This recipe is super easy to make and it uses less than 5 ingredients!  My family loves it so much that during peach season I make it once a week right after I get back from our local Farmer’s market. Peaches are best in season when they are the juiciest but you can still make this recipe with peaches from your local supermarket.

 

Another reason I make this recipe so often is that I discovered that Pepperidge Farm’s Puff Pastry is vegan and does not contain any dairy or egg ingredients. This makes it allergy-friendly for our house. And it’s super easy to use! Just take a sheet out of the freezer and let it sit on the counter for 10 minutes to defrost. I know, isn’t it great! While it is defrosting you can work on the other ingredients or better yet, grab a magazine and just RELAX for 10 minutes. We can all use some relaxation time, even if its only 10 minutes! Am I right?!

This pastry looks so good that you’ll impress your guests and they’ll think you spent hours on it! That’s exactly what happened to me last weekend when we hosted some friends over for a dinner party. I made this Vegan Peach Pastry for my guests and not only did they love it but our guest couldn’t stop talking about the gourmet dessert I had made.

Easy Vegan Peach Pastry

This Easy Peach Pastry is free of dairy and eggs and can be made in just 25 minutes! Ingredients

  • 2 Fresh peaches, washed and sliced
  • 3 tbsp. Vegan margarine (Earth Balance)
  • 1 sheet puff pastry
  • 2 tbsp. sugar
  • 1/2 tsp. cinnamon
  • Organic raw sugar

Easy Vegan Peach Pastry

    Instructions

    1. Preheat oven to 400 degrees. Take out a sheet of Puff Pastry and let it sit for about 10 minutes. While you are waiting for your Puff Pastry, melt your 3 tablespoons of butter in the microwave and combine your granulated sugar and cinnamon and mix together.
    2. Once puff pastry is ready, simply fold out your sheet and cut the sheet in half to form two different sheets. Place one inch apart. Brush some of the melted butter on the puff pastry. Sprinkle 1/2 of the cinnamon sugar mixture over butter. Next, place your sliced peaches on top and line them in a neat little row. Leave room around the top, bottom and sides so pastry will rise around your peaches.
    3. Brush melted butter on the peaches and sprinkle with the remaining cinnamon sugar mixture. Sprinkle the organic raw sugar around the outside puff pastry. Bake for 15-20 minutes.
    4. I use a shaker that I filled with a larger portion of the cinnamon and sugar mixture. Just shake it on and you're ready!
