Vegan Sour Cream Blueberry Waffles

If you’ve seen my website before, you could probably guess that I have a slight obsession with breakfast. Scones, pancakes, cereals, cinnamon rolls…you name it and I’ll make it! So, I bet you wouldn’t be surprised that I have another breakfast recipe for you! This time, I made Waffles. I was talking to my daughter Katie recently and she confessed that she has never had a homemade waffle before, which baffled me because we have a waffle iron thats been in our kitchen collecting dust for years. So I dusted that waffle iron off, and got cooking. What should I start with? Well, I recently saw a recipe for Sour Cream Blueberry Waffles and I thought, why not make some Vegan Sour Cream Blueberry Waffles instead!

I used Tofutti Sour Cream. I’ve been using this vegan sour cream for years and I honestly think it has a pretty great flavor. It’s creamy, flavorful and vegan! The flavor came through very strongly in this recipe and I honestly think it’s the reason these Waffles turned out so wonderful! I’m sure other sour creams would work well also! I’ve also seen people making their own sour creams recently, so if you try that, let me know how it goes because I’m very curious!

I’m sure you could also try this recipe substituting the blueberries for another fruit like strawberries or raspberries! Honestly, this recipe is a perfect recipe to get creative with! I would love to see you all try out and experiment with different flavors!

Vegan Sour Cream Blueberry Waffles

The flavors in these waffles explode in your mouth as soon as you take a bite. Easy to make and so delicious, you will want to eat these Vegan Sour Cream Blueberry Waffles every morning!

Ingredients

  • 1 1/2 c All-purpose Flour
  • 2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 3 tbsp. Granulated Sugar
  • 1/3 c Vegan Butter (Melted)
  • 2 Equivalent Egg Replacer
  • 2 tsp. Pure Vanilla Extract
  • 3/4 c Vegan Sour Cream (I used Tofutti)
  • 1/2 c Vegan Milk (I used Oat Milk)
  • 1 c Fresh Blueberries

Instructions

  1. Preheat your waffle iron.
  2. In a large bowl, mix together the flour, baking powder, baking soda, salt, and sugar.
  3. In a separate bowl, whisk together the melted butter, egg replacer, vanilla extract, vegan sour cream, and vegan milk. Pour the wet mixture into the dry mixture and mix until just incorporated. Stir in the blueberries. Don't overmix!
  4. Pour about 1/4 cup of the mixture into the hot waffle iron. Cook for 1:30-2:30 seconds or until golden brown (timing might vary depending on what type of waffle iron you have).
  5. Transfer to a plate and top with your choice of toppings (examples: blueberries, powder sugar, syrup, butter, etc.).
