Vegan Zucchini Chocolate Chip Bread

This whole spring and summer, my daughter and I have been working on growing a garden from seeds. Before this year, I took the easier route and just bought my plants from a nursery when they’re almost fully grown. But this spring, my daughter came home completely obsessed with the idea of growing all of our plants from seeds. So, we did. We bought seeds, planted them inside in little potting trays, and nursed them to life for months and months. And after almost 4 months of work, we have a garden full of beautiful fully grown plants. Well, we did…until the great bug migration of 2020 decided to satisfy their hunger on my plants. Devastated, I had to harvest almost all my produce early, otherwise I would have to foresake them to the ravages of the bug army. And long story short, I now have a ton of extra Zucchini! So, Let’s make Vegan Zucchini Chocolate Chip Bread!

I really love this bread. I’ve been eating it for breakfast for the past week now and I think I’m going to have to bake more to satisfy my cravings. It’s smooth, sweet, and it has zucchini in it, so it’s healthy? This recipe makes two loaves, so you could either eat them both immediately like I did, or you could freeze one of them for later.

Don’t know how to chop your zucchini into your bread? It’s so easy. Literally just take a cheese grater and shred that zucchini up until you get nice, small thin zucchini strips. You can peel the zucchini if you don’t want the skin to be in your bread; however, I like the look of the green skin, so I keep my zucchinis unpeeled. If you have picky eaters, peel those zucchinis to hide the fact that you’re secretly making them eat their vegetables.

For this recipe, we used a flax seed egg replacement as opposed to any other egg replacer. I just feel like it adds a nice natural flavor to the zucchini bread. I also used vegan chocolate chips in this recipe (I used the Enjoy Life Brand), but you can opt for raisins if you want. Honestly, I like raisins, and I don’t think they deserve the hate they get. Although, if I were to choose between raisins and chocolate chips, well, chocolate chips would win in a landslide.

Ingredients

  • 6 tbsp. ground flax seeds
  • 1/2 c warm water
  • 1 c light brown sugar
  • 1 c granulated sugar
  • 1 c canola oil
  • 1/2 c applesauce
  • 1 tsp. vanilla
  • 2 1/2 c grated zucchini
  • 3 c all-purpose flour
  • 1 c whole wheat flour
  • 1 tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tbsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. salt
  • 1 c vegan chocolate chips or raisins (optional)

Instructions

  1. Preheat oven to 350 degrees and grease two 9x5 loaf pans. Mix together flax seeds and warm water and let it sit for 10 minutes. Grease two 9x4 in loaf pans.
  2. In a large bowl, add both sugars, oil, applesauce and vanilla and mix. Grate the zucchini and add to the other wet ingredients and combine. Add in flaxseed egg and mix again.
  3. In a separate bowl, mix together the flours, baking powder, baking soda, cinnamon, nutmeg and salt. Add dry ingredients to the wet ingredients and mix well. The batter will be thick. Add the chocolate chips or raisins if you would like. Pour the batter into the two loaves.
  4. Place in the oven and bake for 50-55 minutes or until you can insert a toothpick into the center and it comes out clean. Let cool before slicing.
