Vegan Zucchini Fritters

Remember last week when I posted the recipe for the Vegan Lemon Dill Aioli Sauce? Well, if you want the perfect dish to serve with that sauce, look no further! These Vegan Zucchini Fritters are perfect with that sauce! I made this batch for my family the other day and we devoured them! They are a perfect appetizer, side dish, or even main course! And even if you decide not to make the aioli sauce, these Vegan Zucchini fritters hold their own without any sauce! Trust me, you’ll love them!

We use shredded vegan parmesan cheese in our recipe, but grated vegan parmesan also works! I used the Follow Your Heart Shredded Vegan Parmesan (this does contain chickpeas, so if you’re allergic to chickpeas please choose a different brand) and Grated Vegan Parmesan would also work. I also love the Violife parmesan chunk, so that could work! I’m sure the GoVeggie grated parmesan would also work, but I prefer that on top of a pasta, as opposed to actually mixed in a dish. Most of these parmesans can be both vegan and soy-free so keep your eyes out for those! Whichever one you choose, I’m sure it’ll be good!

Also! I’m really excited about using this next product. I recently saw that a bunch of other allergy bloggers were using the JUST Egg vegan egg and I was instantly intrigued. I bought it and it did not disappointed! It makes wonderful scrambled eggs and it worked wonders in this Vegan Zucchini Fritters Recipe! I honestly think it makes a better vegan egg than a tofu egg! Unfortunately, it isn’t soy-free, so for those of you allergic to soy, I recommend using a different binding agent.

These Vegan Zucchini Fritters were actually really easy and fun to make. They turned out so well, too! I mean just look at this next pic!

Vegan Zucchini Fritters

Have a lot of extra zucchini? Maybe your garden is thriving and producing tons of fresh zucchini. What ever the case, you should definitely try the Vegan Zucchini Fritter! Crisp on the outside, gooey on the inside, just one bite will fill your mouth with wonders.

Ingredients

  • 4 c shredded zucchini
  • 2/3 c all-purpose flour
  • 1/4 c fresh chives, chopped
  • 1/4 c grated vegan parmesan cheese (we used Follow your Heart, but check the above post for more options)
  • 6 tbsp. JUST egg replacer eggs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. olive oil

Instructions

  1. Shred the zucchini with a cheese grater. Place in a colander over a bowl, sprinkle with salt and allow to stand for 10 minutes. Squeeze out any remaining liquid.
  2. Place drained zucchini in a large bowl. Add flour, chives and parmesan cheese. Mix. Then, add 6 tablespoons of Just eggs (3 Tablespoons equals one egg). Mix well. Add salt and pepper and mix again.
  3. Heat olive oil in a large skillet over medium heat. Once skillet is hot, scoop a tablespoon of fritter mixture on to skillet and flatten with a spatula. Cook for 3-4 minutes and flip and cook another 2-3 minutes until golden brown. Serve warm.
  4. Pair fritters with our vegan lemon dill aioli sauce or any sauce of your choice. Delicious!!
